CALI´S COUSINE
On any busy corner in Cali, you can find a large black woman wiggling her hips, with her waist cinched, and a large metal bowl on top of her head which is full of chontaduros, a delicious tropical fruit common in Cali. All day long she goes through the streets, whit her familiar cry, "Come buy your chontaduros; how many do you want; only 200pesos."
But this fruit isn't just for foreigners. No sir. The chontaduro and always has been, also for the natives.
For the people of Cali, the chontaduro and their colorful noisy venders are a daily sight, just like the noonday sun. In addition to the chontaduro, there are many other types of foods that make up the daily diet of the people from the Cauca River Valley. It is common to see other tropical fruit begging sold on the street corners; such as, slices of fresh pineapple, green mango laced with salt or papaya. The typical dishes often are based on fruits, vegetables, and root crops native to this tropical region.
Consomme, tamales, empanadas, breads, and rice dishes, are daily fares for the people who live in Cali. The best soup of all is the sancocho. Sancocho is common in many regions of Colombia, but it is the Cali version, which is considered the best. The ingredients are green plantain, yucca, potato, squash, and arracacha. Another important rice dish in Cali is the famous Arroz Atollado. The rice is boiled with pork ribs, potatoes, and other seasoning in a lot of water so that it is quite wet. And since all good customs have legends, the origin of the Pan de bono has one too. This bread is prepared with white corn flour and grated cheese. In a hot climate like Cali, it is not surprising to find a great cold drink as part of the daily diet. And this is Champús. It comes in many bright Colors, yellows and greens. It is prepared whit white ground corn and cooked with pieces of pineapple and lulo fruit that have been sweetened in a mixture of brown sugar and cinnamon sticks. It is common to buy a glass of champus and drink it with a Pan de bono or an envuelto.

COMIDA TIPICA DE CALI
En cada esquina de Cali donde existe movimiento hay una negra grande meneando sus caderas, con la cintura prieta y un platón de metal lleno de chontaduros: "A la orden a doscientos, qué va a llevar el joven, que quiere la niña", suelen gritar, sin vergüenza, a todas horas del día.
Son las negras del chontaduro fruto milenario y exquisito y nativo que se volvió cotidiano como el sol. Además los caleños son ricos en otra serie de frutos y productos de la tierra, como el mango verde que se come con sal, la papaya y la piña.
Las delicias culinarias del vallecaucano - asegura María Antonia Garcés, experta en la materia- son productos de la simbiosis de varias culturas ( quechua, indígena, negra, europea y criolla) que se mezclaron al calor de los hogares.
Las sopas más populares son el sancocho valluno y la sopa de tortilla. Otros platos fuertes de la alimentación caleña son el famoso arroz atollado, y el tamal valluno.
Para tomar un refrigerio nada mejor que un rico pan de bono con un champu, es un liquido de colores brillantes entre amarillos y verdes, preparado con maíz blanco trillado que se cuece con hojas de naranjo agrio después de lo cual se deja añejar en la misma vasija que se sirve con lulo y piña en pedacitos previamente endulzado con melado de panela y astillas de canela.
